10 minute Slow Cooker Bulgur Wheat and Chicken

This is deliciously comforting meal is a guaranteed crowd pleaser with my family. It’s also a warm welcome home after a day at work on a winter evening. Ten minutes prep in the morning and you will have a great meal when you return in the evening.
When you get home, open the crock pot and make up a salad, sauté some greens, blanche some broccoli, cut some red peppers … healthy, quick and easy square meal feeding four for about £10
Ingredients:
- 2/3 Carrots
- 2/3 pieces celery
- 2 onions
- 1 Bay leaf
- Chicken thighs
- Bulgur wheat
- Good glug white wine
Method:
Heat oil in a pan, add onions and bay leaf. When onions are soft, add carrots and celery. Sauté five minutes or so.
Pour 2 cups bulgur wheat into the bottom of the slow cooker, add two cups water on top of the bulgur, add some generous pinches of salt. Stir in softened veg and add some generous glugs of white wine.
Put chicken thighs in the hot pan and brown the skin (as you can see from my photo, I ran out of time to brown the chicken - it turned out delicious) Pop on top the veg and bulgur, cook on low for 3 hours and then leave on warm the rest of the day.
