Quick Chocolate Beetroot Muffins from Abel and Cole
Super quick, no prep, chocolate and raisin spelt flour beetroot muffins all from Abel and Cole
This week the Food Complaints Department experienced an increase in requests for crisp packets and chocolates like the other kids at school eat on the playground. In a veiled attempt to get rid of some beetroot from a few weeks back, I asked the kids if they might like chocolate, raisin and beetroot muffins in their lunch. They agreed to consider the idea.
In a pinch with time after work one afternoon, I read through the recipes online and decided I just did not have the bandwidth to boil beetroot and then grate it … so here is a way to quickly whip up something sweet and chocolaty that incorporates beetroot.
This is an interesting muffin, the spice, orange, beetroot and raisins all work well together; the chocolate adds another layer into it that appeals to my kids.
They are very easy, you can turn them around in about 20-25 minutes, depending on your oven and how quickly you can wash your dishes after.
Ingredients:
- 1 good sized beetroot or 2 small
- 75 ml olive oil
- 2 eggs
- 250 g spelt flour
- 100 g sugar
- 50 g Hispaniola coco powder (the picture shows Green and Blacks, but I used Hispaniola Cocoa Powder)
- Zest of 1 orange
- Juice from half an orange
- Couple handfuls of raisins
- Tsb cinnamon
- ½ Tsp baking powder
- ½ Tsp baking soda
- dash salt
Method:
Beat oil and eggs together, add coco, cinnamon, baking powder, baking soda and salt together. Add sugar. Shred beetroot into the mixture. Add chocolate powder, zest of orange and squeeze some off the juice into the mixture. Throw in raisins and then mix in spelt flour. Pour into muffin tins and bake for 15 minutes or so on 190-ish (my oven is not incredibly accurate at the moment) check with a toothpick or skewer when done.
Wrap in foil and pop a little note into their lunchbox – you might not mention the beetroot part and see if they notice.
