Three Meals Hot Pot: Abel and Cole for Busy Parents

Abel and Cole Family Recipes

My husband loves to cook on the weekends.  This is a double edged sword as he loves not just to cook great meals, he liked to cook copious amounts of food that we cannot possibly consume in one weekend.  He likes the fridge to be clear of all leftovers for our Monday morning delivery and I am left figuring out how to get the kids to eat two kilos of mashed swede (I am planning to make dhal, if its any good I will have the recipe next week).  We had some lamb mince in the freezer that my husband could not leave alone and decided to thaw and use it all up making a massive vat of bolognaise.  That worked for Sunday, but I still had loads leftover.  Next meal was Shepherd’s Pie.  Third meal was chili.  Kids ate it all happily … read on if you can do some upfront work to make the work week sail by.

Bolognaise Ingredients:

1 kilo lamb mince

4 tins tomatoes

4 carrots

4 stalks celery

3 cloves garlic

2 onions

Red wine, olive oil, dried oregano, salt and pepper

 Method:

Use a large stock pot and start by throwing onions and garlic in the food processor, scoop out and sauté in oil until the onions are transparent.  Chop the rest of the veg in the food processor, throw in the pan, add the lamb mince.  Sautee for 10-15 minutes.  Add the tins of tomatoes, a mug of wine and 3-4 tablespoons of oregano.  Pop in the crock pot and keep checking, adding more salt, wine, oregano as suits your taste.  Serve over whole wheat pasta.

Shepherd’s Pie Ingredients:

¼ of the original bolognaise sauce

1/2 bag of Abel and Cole potatoes (500 approx.)

Milk and cheese

Method:

Boil large stock pot of water, throw in cut up potatoes to make mash.  When tender, mash them with some milks.  Spread the bolognaise sauce in the bottom of a baking dish, scoop a thin layer of mash on top the bolognaise and grate cheese on top of the mash.  Bake for 40 minutes.

Chili Ingredients:

All the leftover bolognaise sauce

1-2 tins sweetcorn

1-2 tins red kidney beans

Red Leicester Cheese

Method:

Take the remaining bolognaise sauce and add corn and beans, according to taste and plate it up.  Splash some spice into the adult bowls, top with grated Red Leicester cheese. If the kids don’t seem keen on the beans, throw it over pasta (they eat anything on pasta)

Hope this makes a busy week a bit easier – you may not eat lamb mince for a little while, but its economical, nutritious and the kids will eat it.
