Lemon Oatmeal Muffins

I love Google, the kids wanted something sweet in their lunch and it was the day before our delivery so we did not have much to work with.  I Googled “lemon oatmeal muffins” and got this fabulously simple recipe that is far more nutritious than most muffin recipes.  Here is the recipe on Feast and Famine, but I have rewritten it in metric conversions.

 

Ingredients:

100 grams rolled oats

400 ml plain yogurt

250 grams white flour

200 grams melted butter

150 grams sugar

1 egg

2 lemons (zest and juice)

1 tablespoon baking powder

1 teaspoon salt

 

Method:

Mix the oats into the yogurt, add the juice and zest from two lemons, add the melted butter (I put it in just off the stove and it was fine) . add the beaten egg, the baking powder and salt.  Mix the flour in and pour into muffin tins.  Bake on 200/gas mark 6 for 20 minutes.
